Remove the foam completely  ::) they can't eat what isn't there and it might help prevent water from getting to the coil pack wiring :y

But won't the water go straight through to the engine without it ?

What's The purpose of the foam then.

Soundproofing mostly, and as the cynical might suggest, to trap water in such a way that it drips onto the coilpack(s) in the optimistic view that you will buy a shiny new car rather than fix the old one ::)

Ah sound, So there's no need to replace it after removing it then.

case in point .... while I was busy repairing the engine in my mig I found after leaning on the sound proofing foam, it was full of water  .... I dried it all out and she sat in my dry garage for 3 weeks, But wait! Oh no, It's soaked again ??? where the hell did that come from?? lol you will likely find that there is a water stain on the back of the engine if this has happened too like mine had  >:(
