I haven't had an Omega Estate with a working rear hatch lock for many years. Here in Sweden they get salt and road dust (from stud tires in winter) in to the lock and that acts like cement. Result is a dead lock that doesn't work. Now on my "Summer" Omega that I bought in Germany almost two years ago I don't have that problem and the lock is working.

But I have a vague memory that when locking and unlocking the rear hatch with the key it should also activate the central locks and unlock/lock all doors. Am I correct in this assumption? Because this car don't do that. It just locks/unlocks the hatch.

That's how mine worked.
Central locking worked off the remote, or the driver's door lock - there wasn't one on the passenger side

Yes. Central locking, unlocks/locks tail gate, to prevent it seizing, squirt plenty of wd40 into the lock and remove tailgate trim and lubricate all the workings that you can see. . also the latch mechanism likes lubrication too
