Swmbo is in Ireland, on holiday with my daughter. I got something to eat last night, but I never closed the freezer door, so everything has melted and I will have to chuck it. Not good !!

Plausible, and a good effort. I'm not sure it would wash in this case, as I seriously doubt that anything can have had the opportunity to go out of date since the last "freezer episode". 

I would just shut the door and plead ignorance.

Costly but pretty solid, tell her you went to get some ice cream after your dinner, and the next thing you know you woke up in the middle of the night tingling all over, and  lying on the floor in the kitchen with  the freezer tipped up and  all the grub spilled out, it’s dangerous giving shocks like that so you chucked the lot out, bought  a new one and restocked it (plenty of her favourite nosh).  If she doesn’t believe you she will feel so sorry for your pitiful attempt that you’ll probably get away with a minor bollocking.

I have messaged her....got a better response than I was hoping for, but there again, we are different sides of the Irish Sea.
Just hope the weather stays fine and she is enjoying herself. She comes back the day before her birthday, so that's her present sorted...a freezer full of food. She can't complain, as its cost a grand plus, for her to go on jollies to Ireland.

I'd have noted what was in there and re-bought it all. Anything home made? Just buy the tinned stuff and freeze it in freezer bags.
