Usually I'd agree, though the servers I refer to are used for digital audio delivery and operate on a very small closed network (sub 5 machines).  Whilst they may well be behind when it comes to patching, the versions which they run are stipulated by the software providers who have tried and tested compatibilty with the servers.  Patching and updating is very goos but in a critical environment, sometimes it's best left alone.  If it 'aint broke don't fix it, especially when the network is isolated and has no contact with the internet or 3rd party intervention via disc etc.
