I appreciate why for health and safety reasons Haynes always recommends I disconnect the negative battery lead before working on my Astra, but why should I jack up the front and put it on axle stands to change the thermostat?

To responsibly and safely drain the radiator into a container? Coolant is poisonous, and shouldn't just be dumped on the ground.

I doubt anyone chooses to drain a gallon of coolant straight on to the floor. There is plenty of room to place a bowl under the drain cock.
Interestingly, to change the oil, where access is less good, Haynes observes that access can be improved by raising the front of the vehicle, but does not regard it as essential.

You would hope the most people who work on their own cars wouldn,t like to have various oils and other hazardous fluids sloshing around their driveways/road outside their homes. :-\
