Why does my car feel unstable?

Just driving round town 30 mph and car pulls to left harshly as if the road has dropped away - then its back to normal.  Wheel drops down a small pot hole and away we go again.  Motorway driving AOK and no loss of feel in the corners.  The best wat to describe it it that the front wheels feel loose sometimes?
What would or could cause this? (FYI tyres new this year, pressures at 30 PSI all round)  :-?

Standard fit 225/55/16's shod with Pirelli P7's.  Slow lane on M6 locally has tramlines from the HGV's melting onto the tar in the summer and the feeling is very similar, but inconsistent.  I've had the car 3 years and it hasn't and isn't always like this.
