Title: Any OOF bakers?
Post by: cam2502 on 20 December 2012, 12:45:36
For the sake of TB, i don't want to come across as "gay", but I enjoy pottering around in he kitchen baking all sorts of goodies. And with most things I've got to say I'm pretty good.
However I'm at war with cherry cake. Made 3 in the last week, following the recipe to the letter, but the cherrys still sink to the bottom of the cake.
I've tried washing them, rolling them in flour, no joy, they all end up like the titanic :(
Swmbo has a friend that wants one made, so I'm hard at it today, any help on how to keep my cherrys up will be greatly appreciated  ;D

If the fruit sinks when the cake bakes it's because the cake mixture is too thin or too wet.  Try adding an extra egg which will help the cake set better as it is baking.

Cherries are heavy.  Are you adding them whole or halved?  Try cutting them into smaller pieces so that each piece is lighter and less likely to sink.

Its the same with most fruit cakes they need to have slightly less liquid in them, also smaller pieces are better suspended.
failing that make 2 smaller cakes and stick them together with cherry jam ;D

I'm a very good cake tester if anyone needs a second opinion. Mrs. KW will tell you that I did a great job of testing her mince pies yesterday. :y

Well, I made 2, the first was just the same as the others, sunk fruit! But I made the second with a slightly stiffer mix and they have held well, most are in the middle.
I had halved the cherrys each time.
And that's me finished with bloody cherry cake  ;D

Nothing poofy about Paul Hollywood.

He might be wearing a pink shirt, but that's because he's Secure In His Masculinity.

Anyhow, I'm forever baking instead of doing anything productive around the house - my iced buns are a specialty. I've got pizzas baking at the moment...

I do lots of cooking as you can't beat home made food.

Before putting the cake in the oven make sure the oven is fully up to temperature. A couple of time when I've been in a hurry with fruit cakes and cherry cakes and I haven't done that and when I've cut a slice of the cake I have got that sinking feeling.  :-[ :-[

yep..

my mother used to cook the cake without fruits first.. then cut tiny layers (horizontal-4-5) and place the fruit pieces in those layers (if you want you can boil those fruits for few minutes and use its juice with liqueur) .. after pour liqueur on every layer and lastly cover whole cake with cream..

I'd recommend using an American muffin recipe which is similar to a sponge mix but slightly heavier which will support the cherries during baking, and prevent them sinking.
As for climbing pylons that was o.k when I was young and foolish but now I would sooner take my own appendix out with a rusty penknife than climb one of those things.
