Would have thought been 8nm plus drop of thread lock etc.

Why would you need threadlock?   ???  The bolts only hold it up and there is no need for a seal (as far as I know, but I have been known to be wrong many times)

So with that in mind, is it wise to tighten it to only 8nm?

8Nm is fine.
When I took mine off to fit it to another engine I was surprised at how tight the bolts weren't.
Refitting them at 8Nm felt right.

How did you undo the bolt thats being obstructed by the oil pickup pipe? I tried to remove the strainer today but failed because of this bolt. Couldn't get a socket on the damn nut!

Once the sump was off I had no problems with accessing any of the bolts.
I did try to remove the pickup having just removed the lower sump but that didnt work so the upper sump also came off, then it was easy.

Are you saying the upper sump needs to come out to remove the oil pickup? Because I couldn't even get a socket on the last strainer bolt because of the pickup pipe.

Yes the upper sump needs to come off.

Thanks, that what I thought. Is it a lot of work?

I found it an easy job, but then I had the engine out and on a stand.

Remember to get some new sealant for the upper and lower joins when you reassemble. The grey goop from Vauxhall is generally recommended, but I used Loctite super high temperature silicone sealant and 300ish miles on I have had no problems.
