Have to ask the question...is market meat ok ;)
When we are at the pikey van, we often go to Wimborne Market. There is one of these mobile butcher lorries there, and he seems to be selling what looks like nice meat really cheap. Was selling rump/sirloin steaks today and they looked well nice. Wifey always steers clear, and makes some excuse for not buying. Seems to me there are some bargains to be had, but I admit, I have just that nagging doubt in my mind.
Surely they have to be a certain standard. Its not like Del Boy with a suitcase. I assume these traders are a mobile part of a high street butchers, or am I wrong :)

I always use a Butcher or a 'Meat Van' for everything from Bacon to Joints of Beef.
As always, you get good ones and bad ones, but even the bad ones are far superior to Supermarket crap.

They're absolutely fine if you like a nice cut of equine!! :y

We buy our meat from local farmers either in their farm shop or farmers market. Beef from one, lamb and mutton from another, and pork from another, in fact we also get boar bacon the taste and qualitiy of the meats are excellent and you know the people who reared the animals. :y :y :y
We do go to the local butcher as well when need arises :y :y

Yes agree with that - supported the farmers market for some years now - we avoid the meat vans although I cannot recall having seen one round here for some time - they will still probably still pitch up at Blackbushe market

:o I used to do some work in the grainger market in Newcastle, some of the butchers stalls were a bit ropey, even the market inspector said he would steer clear of some of them!
-
Hmmmmmmm.....after all those replies, I think I'll remain at status quo. Fancy using the Farmers Markets though :y

Ive recently started buying meat from a local butchers.....he's been there as long as i can remember....so im guessing his sausages (which im having tonight for dinner) and his mince hasnt got any horse in them ....
Last week i bought of him.....2 pork chops (they were nice) 2lbs of beef mince and 12 sausages (6 Mexican spicy and 6 plain pork) .....it came to less than £15.....which i thought was reasonable
-
There's a large Sunday market and car boot sale not too far from Scunny every week, and I must admit I have bought meat from such vans as described[they're there every week-so no fly-by-night merchants]and I've never had any problems with doing so.
-
So where do these mobile meat sellers source their meat. Must get it at a good price to sell it at the price they do :)

Straight from the abbatoir, so it's quality, age etc is not the best. A beef farmer will rear his cattle, take the beast to the abbatoir for slaughter and then either butcher the meat himeself or pay a butcher to do it. He will then sell the meat to his customers, prime quality meat. On the other hand for example if he has a cow he no longer puts to the bull he will sell the cow to the abbatoir who will then sell the meat. :y

I feel a fry up coming on :P ;D

Good local butchers often keep a small amount of their own stock or buy animals on the hoof from the cattle/stock markets, they can tell by looking at the animal what the quality will be and bid accordingly. The animal is then shipped to the abbatoir and the sides of meat are returned to the butcher who will let it hang for up to 28 days. :y
The large abbatoirs buy beast en mass slaughter and then supply some butchers with whatever they order so the meat has not beeen judged on the hoof and if the Braising Steak cuts are tough and tasteless then so will the Fillet. The supermarkets are supplied by the large abbatoirs here and in Ireland, the meat often looks nice but look closely, the Pork has thin skin and little fat, when you want a thickish skin and a good 1/4 - 1/2 inch of fat.... Think CRACKLING :P :P. The Beef looks nice, red and juicy with no marbling when you really want it on the brown side with plenty of marbling for the tenderness and flavour. :y
You can't beat a good butcher in his shop or the farmers market, he will tell you all about his produce, the best cuts and the cheaper ones with the best way to prepare it.
I also find it more economical to buy larger joints for the Sunday roast. It seems to cook better and you get more meals from it during the week with bubble and squeak or chips, or another roast and sandwiches etc. I have just ordered Fore Rib of Beef from Dexter cows for 8 people (four adults and two small children) this coming Sunday and left the size up to the farmer/butcher, either 3 or 4 ribs. :y I can taste it now and it will melt in the mouth :P :P :y
-
I got hooked when i tried the butchers own sausages :P :P I went to buy some of his spicy ones but he said you want these other ones "its what i eat every week" . They were very tasty making you want more and more :P Ive not tried the bacon yet but sure it will be of the same quality :y

We get almost all of ours from the local butcher :y his chickens are nearly twice the weight of supermarket ones for the same money or less 8)

Some thing to ponder over, we are different shapes, sizes and weight so are all my chickens. So how come in a supermarket they are all exactly the same weight 1.2 or 1.8 Kg etc. ??? ??? Makes you think ;)

Know what, Cleggy....I have been thinking the same thing for ages. ;)
EMD's statement makes sense .......

For Pork the best is free range Loin off the bone rolled, one in the freezer for next Sunday, I buy a full loin at a time and get the butcher to cut it into 3 or 4 joints :y

Hi,
I am a butcher, was self employed, but got out (another story lol ). I work for a game dealer now, and I do farmers markets up here in North Yorkshire. I make about 20 different sausages, all made by hand, and include wild boar and pork, pheasant, wild duck and venison :)
A butchers gross profit margin, as far as "market van" are concerned, is made from volume sales, and a lot lower % profit margin than a high st shop. The meat is all genuine stuff, bought from the abbatoir/meat markets, and is sold very fresh, hence it may not be as tender as a "familybutchers".
I am a strong believer in "hanging" a carcase for quite a few days, so as it starts to decompose, the acids in the carcase break down the meat tissues, making it a lot more tender, but all that comes at a price. As said carcase is hanging in a coldroom/fridge, it is loosing weight by the day, and therefore money is quite literally oozing away lol. A lot of the major supermarkets know this, and as a result, say, Asda, hang there meat (or rather their wholesale butchers do) for a minimum of 21 days.
Support your local family butcher, he knows his stuff, and try and support your local farmers markets too, as the meat they retail comes from the farm direct, slaughtered in a small abbatoir, hung well/matured and has been butchered with care before been sold to you, the customer

I had a bit of rump steak from Morrison's this evening and it was a tough as old boots! >:(
Still it gave my jaw muscles a good workout, but any more of those and I'll be looking like David Coulthard! ;D

I have to try to get wifey onto butchers/farmers market stuff rather than the convenience of the Supermarket. Very hard as she worked 23 years at Waitrose. :(

We have a very good Farm Shop near here and the steaks in there are twice the price of the supermarkets, but Boy O Boy are they worth it!!! :) So tender that the knife goes through like it's butter and full of flavour!! Yum!! :y

I must admit we stopped buying Tesco Meat after the horse thing, instead using a local abattoir that has a ‘retail’ outlet, only a couple of miles away anyway....... ::) ::)
That said, I was in our new local Sainsbury’s on Friday, next door to the above and bought a couple of rump steaks, well swmbo and Miss Vamps have gone to the caravan (static) so I thought I would treat myself, possibly the best steak I have ever had...... :y :y :y
With well cooked onions, tomatoes and chips it melted in the mouth, left at room temperature, before cooking, then rubbed with oil and covered in black pepper and cooked on a high heat for around 4 minutes aside....lovely :)

Awe struth Mike...I was just going up the apple and pears....now I feel like I'm starving....... :(
