Title: Proper Chips

After years of eating oven ready chips, and suffering hand cut, triple fried chips when eating out, last night I got the old chip pan out.

Result, both Mrs AA and myself agreed they were the best chips we've had for years.

Still got the touch :)

Please, please don't use a chip pan. Either a deep fat fryer or one of those rotary fryer things.

Although proper chippy chips are ace.

Nothing wrong with using a chip pan, you just treat it with respect :y

I am with deviator, please don't use a chip pan.

Much safer and better results with a purpose built fryer. My SIL pulled her chip pan on herself with horrible results.

PS Had Mcain microwave chips the other day. Ghastly and not many in a pack! but hey, convenient.

I just use a frying pan......copied from my dad. He would have been in the kitchen doing chips all night if we had had our way.
Now everybody wants my homemade chips. :y

The old style chip pan works best when you've consumed 15 pints of 'wifebeater' and decide to take a little nap while the pan warms up. ::) ::) :D ;)

I just chop up a few taties and bung them in the oven, with a bit of Flora five minutes before theyre done. But I am lazy...

All my chips are freshly cooked in a deep fat fryer. Why would you want to do anything else?

Turn on frier. Spend a few minutes peeling and chopping potatoes to your preferred size of chip. Fill deep fat fryer with chipped potatoes, lift and shaking contents of frying basket a couple of times so they cooked evenly. Serve. 5 minutes preparation and 10 minutes cooking. This is also a great way to get evenly cooked roast potatoes.

While the chips are cooking finish preparing the other food to go with them.

I can't see how oven chips save much time?

Im with AA, use a chip pan or in my case, a huge saucepan, like a 5L one.

But you have to boil the cut spuds for a few mins first....drain and shake them a bit and let them dry off.....so they go slightly 'fluffy' (they will then absorb more oil and be crispier)

Chuck in oil before its hot....and approx. 15-20mins later you have top tasting crispy chips  :y

I use rapeseed oil in the pan....but each to their own  :y

As AA says, just be careful. Having said that, we done have either a chip pan or deep fat fryer anymore, but I loathe oven chips, so when we want chips, i go the the chippy while SWMBO does the rest of the tea.



Many many years ago, we left our deep fat fryer on in our married quarter in Rosyth for about 10/11 days while we spent Christmas with our family  :o :o :o. When we got back we were met with the smell of warm fat .......... It's just a bloody good job the thermostat didn't fail while we were away.

You can try oven chips,microwave chips or any other sort you can think of but you still can't beat "proper" chips! I do use a deep fat fryer myself though.

Not sure if its nostalgia, fresher potatoes, better ingredients or something else, but my gran's chip pan crinkle chips always tasted far better than anything that's ever come out of any of my fryers...

You don't have to boil the chips first to get them crisp cooked properly.

1. Peel and chip the potatoes into a saucepan of cold water.

2. Rinse the chips well 5/6 times with cold water.

3. Put chip pan on low to medium heat.

4. As the oil starts to heat up, place 1 chip into the oil.

5. When chip rises to surface, place another chip into the oil, and wait for that chip to rise to the surface - oil is ready.

6. Tip remainder of chips into a colander, and shake well to get surplice water off them.

7. Carefully drop a few chips at a time into the oil.

8. Do not shake the basket, wait until chips start to brown, then shake the basket.

9. Repeat shaking occasionally , until chips look ready - enjoy.

10. Do not, repeat, do not have the heat too high.

Fresh, clean oil makes rubbish tasting chips..... but dirty oil makes amazing chips.

Trouble is, chip pans/deep fat fryers stink, that's why I won't have one in the house.

Being a disbelieving soul, I went to a well known British success story but currently down in the dumps Supermarket with her, and had to admit that she had been right for the last 15yrs, when she'd grumbled our store was shite!

Really nice chips, crispy and well done with huge portions, luckily it's only 20 mins down the road from me!!

That's exactly what my 2nd cousin did about 15 years ago. He woke up when the house was fully ablaze. His Mum, Dad, Sister and her baby were all upstairs in bed asleep when it happened. He was the only survivor. Drove him mad apparently.  :'(

Oil or Lard, have to agree with many comments, potatoes are not what they used to be. Bought some proper new potatoes from a farmers market and threw most of them out, no better that supermarket ones, bland and tasteless............. :(

We tend to buy a leading brand of oven chips, but cook them in a deep fat fryer, but they do not seem to go brown, perhaps, after reading this we should look at making real chips..... :y
