Title: Steak
Post by: feeutfo on 19 May 2011, 01:08:40
I like steak. In fact in our house it's a daily conversation. "What do you want for tee?" she asks, to which the reply without fail is always "Steak and chips"! ( curry being a treat when we've been good of course) Then following that there's the chat about what we can actually have for tee as that's what's available etc. Some times we actually do have steak and chips...

So I've had some steak in my time, not all of it good, Asda really are the pits, and some excellent, or so I thought. Until we went to Spain a short while ago. Brother in law found a steak house near by. I was a bit dubious when we pulled up outside, didnt look much, bit unkept. But the service was great, friendly and loads of local produce hanging from the ceiling. Then the steak arrived. Twice the size and thickness of anything I've seen served in the uk. But not just one, but two steaks. Beautifully cooked and so succulent I could not believe it.I've heard talk of melt in your mouth steak, and this really really did. I've never tasted steak like it, absolutely beautiful. Didn't need a steak knife, a blunt knife went through like butter. Incredible.

Two of our party could have gone the same again  ::) and the portions where huge. Cost? €25 a head for the meal. Including drinks.

Might get the quality over here, but at 3times the price easy, surely?

Steak is one of those meals I tend to try and avoid when out... I'm always disappointed because Mrs LD can do it better ::)

We're lucky that we found a good butcher who's actually cheaper than a decent cut in the supermarkets :y

My choice of cut is Rib Eye, although I'm quite partial to a decent T-Bone too :y

One of my favourites, too, although seldom better than from the local butcher and cooked on the barbie.

Best steak I've ever had was from here: http://www.melssteak.com/

Might be a bit of a trek but you won't be disappointed. ;)

Had a similar experience when staying in Santa Ponsa in Majorca a few years ago. Found an Argentinian steak house in town and decided to give it a go. To this day, one of the best fillet steaks I've ever had and cooked to perfection.
A really funny moment when we were there.....my brother in law is quite partial to rare steak and when asked by the waiter how he would like his it cooked, he replied "just pull it's horns out and slap it's arse" ;D ;D We all fell about laughing leaving the poor waiter feeling somewhat puzzled and bemused.

We eat breakfast.....lunch .....and  dinner in our house. We are a very "suffistikated" family.. ;D
I'm partial to the perfect steak. Which I enjoy  about one time in every ten.... :'( Nine times out of ten I'm disappointed. :-/.

Mrs Opti is not the best  meat cook in the world... :( :y

I like my steak well done. I'm not keen if it looks like a good vet can get it back on it's feet again.... ;) :y

"Wipe its' @rse and walk it through the kitchen".  ;D

I recently went to the US and was looking forward to a decent steak. One night we went to a restaurant that had been recommended. Bit pricey but we'll treat ourselves. Alarm bells should have started ringing when the waiter started giving me all the bowlocks about it being cooked over 3 different types of wood, etc.

What did the steak taste like? Wood, on the whole. :( Completely ruined. >:(

I always used to order well done steak...

The trouble was, most places seemed to take that to mean burnt  :'(

I then started to order medium - well, and that came as 'well done'

Now find Ive moved to medium, and find that even tastier, not as keen when its too pink though.

1) Slaughter high quality beast

2) Hang for 28 days to mature

3) Butcher correctly

4) Place 1" deep slice on hot griddle for 3 minutes - Do NOT touch - especially banging, proding, pressing etc .. LEAVE IT ALONE !!

5) Turn over for another 3 minutes and leave alone

6) Remove from heat and allow to rest for 2 minutes.

7) Serve and enjoy ( this will still be very rare ... correct term is "blue"  :) )

Unfortunately a 'medium' steak is open to a lot of interpretation, and I've had anything from charcoal to a living piece of meat under that description  ;D

There's nothing like a perfectly cooked steak though, I've had some absolutely delicious fillet steaks from places nearby, they're just not big enough  :(

As per Entwoods post! Thats a proper steak, anything else is a waste of good meat! It wastes all the goodness and taste when even done medium. When I get the ferry to or from France I always ask for a rare steak and as the galley crew are usually French you get a proper, good blue steak, yummy, schlurp!

Best place to get good steak is from local butchers or local farm market/shop. Used to go out with a lassie years ago who worked in local slaughterhouse and would get the whole fillet of steak for £17!

I only seem to get a good steak if I braise it with onions, mushrooms, herbs and wine and let it sit there for a long time....... :y :y

Ahh .. Brittany Ferries .. "Entrecote Bleu s'il vous plait" ... my holiday has now officially started :)

As a matter of interest - well might be to some :( - many restaurants, especially high turn over ones, "pre-cook" steaks to just over rare and place to one side. When a customer asks for a medium or well done one of these is used as it speeds up the service time ... but you are getting a steak that has been cooked twice ... no wonder they taste like shoe leather.

A "blue" or "rare" steak cannot be treated this way so is always freshly cooked.

Or the Sea France ferries lol!

And on another side note to Entwoods post, most supermarkets and pubs/restuarants buy their meat in from abroad and its not really proper steak! Just google zebu.....
