I intend fitting the omega 3.0 V6 into another car,
I dont need power steering or the air con pumps,
can I just remove them and use a shorter belt?
how much power do the two pums sap?

Very little, I would say. maybe 1 or 2 BHP for the pair.
Air con chucks out a little heat but not much. Half of that came from the interior and half as power from the engine. PAS steering runs very cool, although there is a small attempt at a fluid cooler. The power can only turn into heat unless you're constantly twirling the wheel so we can infer that it doesn't use very much.
Make sure the water pump is still running in the correct direction if you do run a shorter belt. I think that might be a challenge without some sort of idler at least on the nearside of the engine.

Gls has no ac I believe, so a v engine with a belt of no ac length should be easy to source, but a v engine with no ac AND no pas...? Might be a challenge ?

You should be able to measure the run with something like a tailors tape but don't forget to allow for the tensioners' tension if that makes sense!?

The non-aircon V6's use the same belt as a X20XEV :y

I suppose I can run a loop of pipe from the flow to the return on the aircon pump.

You shouldn't even need to do that, you could just use the whole pump as an idler if necessary - unconnected the mag clutch will be disengaged so the front wheel will spin freely without trying to turn the actual compressor.
