Does anyone have the answer why some omegas have polished walnut and some are matt, :-/

Early facelifts were mat finish.

Generally '70s cars seems to have a matt finish, around the time that real highly-polished wood disappeared from most cars, replaced by matt facsimile stuff. Presumably influenced by the American vehicles of the era.
I suppose the return of the matt finish is just a fashion thing, but of course after a year or so, they went back to glossy wood. Fashion is weird.
