Being reasonably technically compitent, how long would you estimate that it should take me to replace the rocker gaskets on a 2.5? are both side as bad as each other? and is it worth doing both sides at the same time even though only one is leaking?

Passenger side is more fiddling, due to wiring loom and other crap in the way... ...but whilst you have all the air intake off...
Tunnie and I can remove plenum and intake bridge in about 5 mins (loads of practice this wekend), so I reckon I could do drivers side in maybe 1 - 2 hours fairly easily. A spare set of hands would make passenger side easier than struggling alone.
Worth replacing plenum O rings (6) as well.

All depends if you have done that kind of work? - I take it you've had the plenum off before?
As TheBoy said we can take the plenum off in 5 mins, on my own i could do it in 8-10mins. If it was first time doing it more like an hour!! ;D
Again on work like this, second set of hands would be highly recommended.

2-3 hours if you havnt done one before.
Replace both sides at the same time, clean up the head faces and cover grooves then degrease with cellulose thinners etc.
Use Black sealant on 90 deg corners such as bottom of front bearing caps and top of D holes at back.
On the passenger side head, remove the cover to the cable tray, move the cable tray moulding to one side which leaves the (more flexible) wiring over the head so it is easier to move out of the way.
Take some additional time to check and clean the breathers throughly, if they are blocked then the new gaskets wont last long.
