Finding a manual box would be your first hurdle. All proper Omegas have an auto box ......... ;) ;) ;)

Real men can use 3 pedals! ;D
I think my Miggy (3.2 Manual) has a R28 box on it.
I reckon it would be a considerable ball-ache to swap an auto box for a manual - you'd need to be seriously attached to the motor, and desperate for a manual, to do it.
Easiest would be to track down an ex-plod Miggy, and swap over the toys from yours

I have done a manual conversion on a 3.0, providing you have all the parts from the donor car, a new clutch kit (gen vaux) and access to a ramp its no big task, what motivated me was the fact that the autobox was goosed, and taking it out to put another one in was nearly as much work as changing to a manual box.
was well worth it in the end, as being on a small island you just cant get the economy from an autobox.

I have an AR28 3.0 manual gearbox (or 2!) here, along with a 2.5 manual tourer I'm breaking which you could get the pedals etc from...
