I believe it is at the back of the engine in the V mounted on the coolant bridge, there are 2 sensors, the one you are looking for has the single wire attached.

The V is the V in V6 I am probably not very good at explaining this but, it basically means it is between the two banks of cylinders, at the back roughly under the plenum (big aluminium bit on top of engine) it is possible to change without removing plenum, but easier with it removed.
You will need long arms and patience.

It can be changed from the top, it is just awkwardly located for people like me (overweight)

Plenum off, and scuttle off for best access, as above its in between the 2 banks, you have the fuel injection manifold, below that a plastic plate, below that the oil cooler, at the back there is a coolant bridge, temp sender is on that

This may be usefull, http://www.omegaowners.com/forum/YaBB.pl?num=1152564281

In picture 6 you can see the coolant bridge at the back of the engine. And the temparature sensor is visible slightly to the left of the coolant bridge.

I save a copy of the picture and enlarged it to get a better view.
