Had a slight grey hair moment last week when I depressed the brake and very little happened, for a few meters.... then the brakes kicked in. Did it again the next day so I was thinking sticky caliper or tiny air leak until I noticed the brakes were getting very rusty, even in as quick as 16 hours....
Do I need new disks or should I be looking at something more serious?

Mine does this occasionally, I put it down to rusting because it's usually after it's been stood a few days. I will be interested in the replys you get....

Are they cheap pattern disks?

Are you saying that absolutely NOTHING happened for a few secs, or that apparent braking effort appeared seriously reduced?

mine are genuine with oe pads and as said, if the car has stood over the weekend and in damp conditions the discs do rust quickly and the first application at the end of the road is a bit dead and rumbly as the pads scrape the rust off the swept area of the disc.
I would not say that nothing happens at all with rusty discs, so your description implys a more serious issue. I wonder if the vac system to servo is leaking somewhere?
Depends on the feel at the pedal i guess, if its harder than normal or goes soft to the floor then there i would think a problem with vac/servo assist or fluid, but if the feel is the same i would be looking at pads and disc marerial, for wear. Discs can degrade badly esp on the outside edge of the swept area inboard side, i had large chunks flaking off mine, but this affected performance constantly.

I can hear the brakes engage they just dont do anything for a couple of seconds.
Dunno, recently got the car so dont know if they are pattern or not.
I would agree if it was standing for a weekend but they are rusting after standing for just 16 hours or so albeit in wet conditions. If I pump the brakes so as to put pressure in the system before moving off it has no effect.

Before starting the car pump the beakes and hold the pedal down while you start the car. Should be that the pedal gets firm as you pump it then slowly drops when you hold it and start the car.
