Firstly, I will start by saying I don't think there's actually anythin up engine wise - mechcnically or electronically.
BUT - the Omega is not being at all responsive, on the gas pedal, for a V6.
The throttle cable is correctly adjusted, however if you want to give it some beans, you have to really hit the pedal down hard.
It sometimes feels like it refuses to kick down, unless you really nail the pedal to the floor. If you press it really hard, it's better.
What's the best starting point, for a potential kickdown issue? (I removed the mat!!!)
Kickdown aside, though, even if you press the gas half way down, without kickdown, it still should be a lot more "lively" than it is.

It could be the injectors are clogged, even air filter can be an issue if its really dirty

Mine's a bit flat at the moment... It's due a cambelt change in the next couple of months (7k) and Mark said it could be a slight timing issue when I spoke about it at Newent. Just a thought... I know you've just replaced it but worth a check

I did my cambelt kit less than 3k ago... confident that is all well and good :)
I am actually thinking vaccum issue... :question

Isn't there a kick down switch on the non-DBW cars? Might need adjustment. Doesn't explain part-throttle performance.
Multirams working? Air filter clean? Cats / back box not blocked? Can you remove the ducting and check that you are actually getting full throttle with the pedal fully down?

I alway use the 'S' button when a change of 'pace' is required, kick-down on our older Omega's may not be as sharp as a newer/low mileage models.

good checklist..
I can think only a few additional things related or not related..
throttle position sensor ( I changed)
MAF (I changed)
Lambda sensors ( I changed)
fuel pump performance ?
best way to see if there is actually a problem bring two miggies side by side and test either by comparing their engine revving performance or compare them on an empty road :-/ as a direct approach to see them under load.. (although yours is a bit modified)
