How do you take the gear knob off of the gear lever :-?

With some degree of difficulty, usually! ;)
In theory, they pull off.
In practice, they're held on with Loctite 641 bearing retaining fluid - or equivalent, same as lots of Vauxhalls.

I've sawn them off before, but only when a replacement is to hand! :y

That seems mad you would think they would screw on :-/

I had a 98 elite which had a screw on gearknob. Since that car though they have been glued on like Pedro said.
Otherwise swap the whole thing by dropping it out from underneath   :y
