Cant really do a useful rollcage without losing the rear seats
Best thing to do is carry 2 cans of expanding foam (per passenger) and stick one each side of the chair. Then, if you do get a 'wobble on' and suspect the worse, shout 'cans!' and everyone should deploy the contents of each can around them.
This will fill the cabin area while protectintg any one inside from any implosive reaction from the roof
A roll cage for the caravan would stop it disintergrating and spreading crap all over the road. In fact, it should be a legal requirement come to think of it

Certain circumstances ie weight ratios in Europe allow you to tow at similar speeds though.
I have a 3.1L V6 Omega Elite 2005 plate.
I use it to tow my caravan and it performs great, but im concerned about if i manage to get a bit of a ''tank slapper'' on when towing it and thus potentially flipping the car, if im doing say 70/80mph-ish on the motorway, so im considering fitting a roll cage to the interior.
Can anyone recommend any roll cages for my Omega?

I think anything over 80mph they tend to look at you.
Believe me they will as you are exceeding the 60 mph limit.
