Omega General Help / Erratic Temp Gauge ???

Hi everyone !
Got a problem with my temp gauge on my OMEGA 2.2 CD Auto.
It has worked fine since i've had the car, but over the last week it rises to about 80-85, then drops down to the starting position.....then rises back up again. It never stays stable anymore !
Water & oil levels are fine.....Any ideas
