As an aside, are you sure its a 2.5DTI, as Vauxhall never released such a car (only Opel). If its a Vauxhall, but pre approx 2001, it will be a 2.5TD, and if a Vauxhall post approx. 2001, it will be a 2.2DTI. There are pretty major differences between these various engine types

Back to your issue, misting up is obviously caused by moisture in the cabin - hardly surprising this time of year, added to the fact that the Omega doesn't have the best ventilation in the world.
Reasons it can happen are anything from getting in with wet coats etc, A/C suddenly stop working or water entering the cabin.
Some pointers to check:
Is the AC working (AC acts as a dehumidifyer, but when turned off, and lot of the recent condensate re enters the cabin)?
Is the passenger footwell carpet wet - if so check scuttle drain is clear.
Is the pollen filter wet or missing (damp ones can be dried out).
Is the correct pollen filter fitted if a facelift car (non carbonised ones on facelifts can cause recirc function to come on automatically)
Is recirc on
Is the outside temp, according to temp gauge dipping below 4C (thus AC system shuts down)
Check the ventilation exhaust vents (OS rear cubby hole in boot) are clear, and not stuffed with rags/blankets/shite, as this stops/reduces airflow entering the car, as it can't effectively exhaust.
Leaks around sunroof (rare on Omega) or split doorseals (rare on Omega)
If its just a load of wet people got in together, and its too cold for the AC to work (4C), just doing a few miles with the rear windows open by about an inch, and heaters on pointing to floor (and windscreen if required), can do wonders to help remove the excess moisture quickly... ...and if that works, revisit the exhaust vents for restrictions
