The ‘oil light’ is triggered by the Oil Pressure Switch, not the oil quantity. Low oil level if present comes-up as a text message on the MID display and not as a warning light.
If you have low oil pressure while driving this is potentially serious (other than if it occurs at idle only when the engine is warm). However, in most cases this is down to a faulty Oil Pressure Switch (around £5), or problem with the wiring to it. It could also be a short-circuit on the instrument panel that causes the light to come on, but this is not very likely.
I suggest you start by checking the wiring and the connector to the Oil Pressure Switch (located at the bottom, front of the engine, just above the sump line and left to the crank pulley when viewed from the front) and ensure that there are no exposed or damaged wires.
If this proves OK, you can replace the Oil Pressure Switch and see what happens next.
But I suggest you deal with this sooner rather than later, because in the unlikely event that you do actually have an oil pressure problem, you don’t want to be driving the car too much….
