I'd say copper grease would be fine for the idler but I'm not convinced that's your problem.

When you take the wheel off, are there any marks on the back of the wheel or on the suspension components that would indicate contact?

Is the flexi brake hose properly routed and not snagging/pulling when you turn the steering (should be easy to see with the front end on stands and the wheel off).

With the wheel back on but the car still on stands, is the wheel free to turn with the steering straight and on full lock?

From your symptoms, I'd suspect the new bearing is dodgy - seen this a few times on after market bearings/hubs where the hub doesn't sit 100% square and makes the whole hub/disc/wheel assembly "wobble".  Do you get any vibration under braking?
