Omegas have a pressurised cooling system which allows the coolant to reach temperatures far in excess of the boiling point of water at normal atmospheric pressure. Running the engine for 1 hour with the cap off the expansion tank must have led to a fair bit of 'boiling over' & coolant loss!
1) To remove an air lock, it is only necessary to remove the cap whilst the engine is warming up & 'burping' the radiator hoses by giving them a good squeeze occassionally. Once the engine has reached normal operating temperature you will feel the top radiator hose become quickly hot as the thermostat opens, when this happens give the hoses a final 'burp' & replace the expansion cap. By & large, the system is self bleeding and after the initial 'burping' you should not need to do it again unless there is significant coolant loss.

Are you loosing coolant?, is the level in expansion bottle below the correct level (marked as 'Kalt' = cold )? After a run, and after allowing the engine to cool for a short period (say 1 hour?) is the level where it should be? If not, allow it to cool right down to ambient temperature & then top up with a 50/50 mix of water & antifreeze until the level is correct, replace the cap and check the coolant warning is off. If it is still on, then either the bottle level sensor is goosed or the sensor plug has come loose (underneath the coolant bottle). HTH :y
