This is a pic of a 2.5 head (left) and a 2.6 head (right).

Notice the holes to bolt the ignition packs to (in between spark plug holes) on the 2.6. This appears to be the main difference. Although apart from identification, it doesn't make much difference that I can see. I did notice the oil 'jets' (cough, bolts with a hole drilled through) that are there to cover the cams where of a different design, although I don't know what effect that it would have.

If you used a 2.5 head on a 2.6 block/car, there would be no where to bolt the ignition units down, but the rocker covers are different on the 2.6 and shaped to allow a snug fit any way.

If you used a 2.6 head on a 2.5, there should be no major problem as long as there is enough room to route the HT leads.

Found the oil jet bolt pictures, although for the life of me I can't remember which is the 2.5 and which is the 2.6 one. At least it shows the differences.
