Thermostat stuck open maybe?

Hello guys, my Omega developed strange temp gauge behaving few days ago. Temp raises from cold start without a problem, holds steady 85 deg as always on motorway for entire trip to work - 45 miles long and even when I stop at red light when I arrive into town. But when I take off from stop, twmp gaige drops a few degrees and then comes back to 85. Wayer pump was done a year and a half ago, together with belts and pulleys. Ibposted a link to short youtube video of mine for you to see what I mean.

Normally, a stuck open stat would cause slow heat up, but you say yours is normal?  ie, will reach normal temp within about 2 or 3 miles of gentle driving?

The video certainly does look like it's suddenly getting a load of cooler coolant to the sensor after revving.  No fans stuck on?

No fan stuck on...It heats up to the temp as normal and doesn't want to overheat. Temp is steady on motorway only interior heating is poor. Heater matrix is clean - done in september.

Just a thought...car would overheat on motorway if it was water pump failing probably?

A bit of update on this guys, I've found coolant bottle almost empty, had to add a liter in. No obvious leak anywhere, but coolant bottle is stained all around the edge with red/brown residue, like the cap was bad. Car has no heating anymore, front vents blow luke warm air and cold from back vents. Omega doesn't overheat and the temp gauge still behaves as in video uploaded months ago.
And head gaskets were done a year and a half ago.
Any ideas?

Oil cooler failure most likely, if there was hints of oil in coolant.

I'll need to check for oil in coolant then....by look it seems there's only some rust residue

Ah, Ok, wasn't that clear from the photo.

Rusty coolant can only really be poor servicing I'm afraid, not using a strong enough coolant mix, or not changing it at correct intervals.  That doesn't explain where its leaking/disappearing to though.

I can't talk for previous owners but it had coolant replaced 3 times since I bought it with 50/50 mixture. It seems like it's leaking from coolant bottle cap, since it's stained on the outside. Would oil cooler leak make pressure build up? And how is poor heating connected with this?

Did you replace the cap with the bottles?

The bottles have a nasty habit of failing around the neck.
