Breather pipes

Can I blast carb cleaner down the two big pipes (y shaped thingy) to help keep it clean until I get chance to have it all cleaned properly. or will it cause issues if I dont disconect them first,

If you do then the carb cleaner (and any crud it loosens) will go back down through the breather box and into the sump.

My choice would be to take them off the car and clean them.

Gently blowing through with compressed air is a good way of checking the pipes are clear, if blown both ways, into the sump, then through the top of the plenum.

But as said, its really not a good idea to flush all sorts of goop and gunk down into the crank cases. "might" block the oil pick up.
