When I saw it done the guy had a digital thermometer.  The probe was placed in the vent with the system on Lo and the reading taken.

Any thermometer will do, even a poundshop one will give you an accurate enough reading for what you want.

Did the person who re filled it not take a before and after temp reading?

No. It wasn't blowing any cold air as the system was near empty and didn't take a reading before or after.

Thinking back, it did take a very long time to refill the system.  :-?
