I've noticed over the time on OOF (nearly a year)that you can highlight previous posts on a topic in your new post,how do you do this..........keep it simple please!

I have just realised that I am thinking at cross purposes.  I actually know how to highlight a quote

What I thought this post was about was how you take a section from somebodies post and just quote that sentence or paragraph out of a whole piece of text.  When I press quote I always end up with the whole section that the previous poster has written.  How do you do that please?
