If you put water in the rear of the engine, will water come out through the left side of the engine, ie through the thermostat on a cold engine?
It's an X30XE

And what is most likeley to have failed if water is dripping down the left side of the engine onto the AC pump?

The thermostat is above the "water entry point" of the coolant transfer pipe at the rear of the engine.

The point immediately above the AC pump is the top hose connection from the rad to the pipe leading to the thermostat. So, if there is water from there it could be a leaking top hose.

Is the leak only there when hot - or cold as well?

the problem you have is the thermostat pipe-bet the seals have gone in it IMHO :y

I'm installing a refurbished engine, which has not been fired yet, so it's stone cold.
I filled it with water and left the garage, came back a few days later and the was some water under the engine (It was dripping from the powersteering pump to the bracket and from there to the ac pump, then to the ac pipe and on the ground)

When I noticed this I pulled off the rubber hose on the left side to check it, when I did this alot more water then what could have been in the thermostat pipe came out, does that mean a broken thermostat?

Worth removing the stat and the pipe. There are rubber seals which need checking - both between the pipe and stat and stat housing to block.

The pipe is held in place with the famous "B" bolt - so good luck with that.  :y

I'll have to give it a go then, I should have checked the thermostat which wasn't fitted by me, before I put the engine in 

I've changed those parts on an earlier engine, so I know how it is  :(
