Think I've made my decision for my Opel Rekord Coupe engine transplant. My Omega wont be happy but I think it's going to have to be the V6 that goes into the car.
Was having a chat with 'Monzaman' (the guy who will be performing the surgery), and he also favoured the V6.
Weighing up the 2 engines you have:
V6 V8
Modern technology Older technology
Plenty of power Plenty of power
Fuel economy ok

Fuel economy poor

Injection Injection or carbs
Lightweight Lightweight
Subtle / quiet 'ish' Loud & proud

I have the donor car I'd need to source the engine and gearbox

I'm sure there is much more I could consider but these are key points I think :-/
Monzaman made all the points that you forum guys mentioned which was good. He didnt criticise the V8 as it really cant be; its been a fantastic engine with an amazing history. However I have the donor car (although when it becomes a donor I will need to source another one!), its a lightweight engine, more economical, more modern, and has plenty of power.
Thanks a million for all of your comments and advice with this. No doubt as I am driving home this evening and hear the roar of a V8 I will start reconsidering again!!!
