engine getting very hot

i have a 3.0 mv6 the temp gauge stays above about 97oc a lot of the time it stays over 100. i have changed the radiator,  water pump water temp sensor flushed the system and changed the main fan. what else could be wrong that will make the temp so high. other than this it now runs good.

Are you sure the gauge isn't giving an erroneous reading?

The coolant system should be self bleeding, but if you have a blockage (heater matrix for example) an air-lock could exist.  Have you flushed the heater matrix thoroughly?

Do the cooling fans cut in when it gets to 95/100?

not  sure if gauge is correct but have run it with rad cap off been for drive inside car gets nice and hot if i put air con back on gets nice and cold. how do i check the gauge.
