how do you check alternator

how do you check what voltage the alternator is kicking out.ive put the multi meter on the two wires, at the back of the alternator and its coming up 7 volts is this the correct way

Just put the probes on the battery posts, should see something close to 14V if all is well (with engine running).  See guide by Kevin Wood in the FAQ Maintenance Guides section:

Exactly as above - with the engine running take the voltage across the battery (doesn't really matter which way round, you'll just get a negative reading).

Perfect reading would be about 14v and as you rev it should go up a bit. If you have 7v you got real problems and I would expect the ignition light to be on and the engine to stop pretty soon.

The one advantage to the charging system is its normally the fan belt (sorry aux belt these days :P), the battery or the alternator and all are pretty easy to change.

Multimeter wires on battery terminals, engine held at 2000rpm, headlights on, you should see a figure of somewhere between 13.8v - 14.4v.
