Bear in mind, I haven't seen an Omega door card for a winder, but 30mm seems really large to me.
All of the door cards I've seen have a hole little larger than the spindle and a much larger circular trim piece to cover the gap which would be about your diameter.
Terry has door cards with the winder holes so he already knows what size hole is required  ;-)
To minimise thread pulling I would drill a pilot hole from the back (or maybe just push a nail through) then cut a cross in the fabric and trim away the unwanted fabric before drilling the full size hole.

The GLS door cards came with the doors, but they are dark blue in colour, and the CDX car trim is light grey. I know it's not important, the car had immovable rear windows when I bought it, but jobs are scarce in January, all my 8 cars are running, so I thought I would switch door cards this weekend. The only snag is the CDX cards lacked the manual winder holes. The holes are 27mm in diameter, clearly a hole saw job, so a bit of a challenge.

Good tip. The hole centre is marked on the CDX cards so I can easily drill through. I had pallned to practise on the blue cards, drill a pilot hole through, then put the hole saw through from the fabric side and see what a mess it made of the fabric. I find my 30mm hole saw is too big so I need to obtain a 27mm  hole saw..

Screwfix do not do a 27mm hole saw; they do 25mm and 29mm. I have a 30mm hole saw. There is a dished washer that fits neatly in the 27mm hole in the GLS door card. I could enlarge the 25mm hole with a file, or pack out the 30mm hole with bluetack. I know it's all trivial, car goes fine, but I must decide what to do!

Fit all the GLS trims to the CDX :y easy enough to do and you'll be finished in time to help with lunch ;)

Job is done, thanks to all for advice. 25mm hole was quite bit enough.  I had forgotten that putting the winder lever back on is simple, replace the spring clip and push lever on.
