Have you tried a Bandit 1200? Goes like a stabbed rat (LOL) everywhere above 2,500 rpm. Especially pre 2001 models.

Fast enough to keep up with sports bikes on road (and track actually) too.

I have an 883 converted to 1200 with a Screamin' Eagle ignition module and Andrews N4 cams.
Away from the lights it leaves my mates BMW M3 in the dust up to 70mph (dunno which of us was most surprised at that ;D)  
About 50 to the gallon and that's not hanging about.  Low seat height and can be lowered more with a bolt on kit.

i`ve started to get the bike bug again i`ve found meself buying mcn each week and looking at ebay for cheap middleweights like a gt550/750 or cx500/650`s..... ::)
