OK OOFers - you will seriously thank me for this, my wife's favourite chinese meal is deep fried crispy shredded chilli beef, but a few years ago it lost its "crispiness" anytime she ordered it - it was more like squidgy bland beef - so i resolved to make it myself - how hard can it be? the answer - not very

i've chopped and changed this recipe over the years - and its always worked regardless of quantities used, this is one version but don't even worry about sticking religiously to the amounts - they're all variable - just personal tastes - trust me its called "No-fail" for 2 reasons - one of them is how adaptable you can be with the ingredients

to be honest, i don't make it much (you'll see why when i run through the ingredients!) but i could eat it every day - its that good :-/
i'll give you what i used - but feel free to adjust any or all amounts!!
300-400g of beef (as cheap as you like - makes no difference)
1 pkt of cornflour
1 lime
2 tablespoons of sugar
2 tablespoons of soy sauce
1 teaspoon of "very lazy garlic"
3 teaspoons of "very lazy red chillies"
small bunch of spring onions
oil for frying
beef - cut into small strips and roll in cornflour - covering each piece completely
mix sugar, lime juice and soy sauce
heat a large wok (or frying pan) fill with about an inch of oil - crisp and dry or similar

once the oil is really, really hot carefully put the beef in the pan - let it deep fry for a few mins - until golden brown and remove from the pan
drain the oil - keep a small amount to quickly fry the garlic and chilli, tip the sugar/lime/soy sauce mix in with it and stir until it bubbles (a few secs) then put the fried beef in the pan and toss it around till the sticky sauce covers the lot
sprinkle with chopped spring onions
serve with boiled rice or egg fried rice
sit back and bask in the glory
