Never Fail Crispy Beef
« on: 22 August 2009, 09:31:05 »

OK OOFers - you will seriously thank me for this, my wife's favourite chinese meal is deep fried crispy shredded chilli beef, but a few years ago it lost its "crispiness" anytime she ordered it - it was more like squidgy bland beef - so i resolved to make it myself - how hard can it be? the answer - not very  :y

i've chopped and changed this recipe over the years - and its always worked regardless of quantities used, this is one version but don't even worry about sticking religiously to the amounts - they're all variable - just personal tastes - trust me its called "No-fail" for 2 reasons - one of them is how adaptable you can be with the ingredients  ::)

to be honest, i don't make it much (you'll see why when i run through the ingredients!) but i could eat it every day - its that good   :-/

i'll give you what i used - but feel free to adjust any or all amounts!!

300-400g of beef (as cheap as you like - makes no difference)
1 pkt of cornflour

1 lime
2 tablespoons of sugar
2 tablespoons of soy sauce

1 teaspoon of "very lazy garlic"
3 teaspoons of "very lazy red chillies"

small bunch of spring onions

oil for frying

beef - cut into small strips and roll in cornflour - covering each piece completely

mix sugar, lime juice and soy sauce

heat a large wok (or frying pan) fill with about an inch of oil - crisp and dry or similar  :y

once the oil is really, really hot carefully put the beef in the pan - let it deep fry for a few mins - until golden brown and remove from the pan

drain the oil - keep a small amount to quickly fry the garlic and chilli, tip the sugar/lime/soy sauce mix in with it and stir until it bubbles (a few secs) then put the fried beef in the pan and toss it around till the sticky sauce covers the lot

sprinkle with chopped spring onions

serve with boiled rice or egg fried rice

sit back and bask in the glory   ;D :y

serves 2-3

simples  ;)

Great stuff bj - I'll try that tonight but will substitute chicken for the beef. :y :y

Could be the start of a occasional series with input from across the membership - yes?

bon appetit :y

ps i'm no chef - thats why i can guarantee it never fails  ;)- completely idiot-proof!
just use as much or as little meat as you prefer, same goes for soy sauce and sugar (depends if you like it "dry" or loads of sauce (i like it dry so if you want more sauce just double up  :y)

In my circle of friends and family more men cook than women!
Jimbob says that he can't afford to keep me in pans, besides which, he would like to be able to eat the food when its been cooked!
I am a disaster in the kitchen! :-[

Well Ljay it is certainly true that men seem to be the majority of top chefs, and usually populate more commercial kitchens than women 8-) 8-) 8-) 8-)

My wife and I are equally good cooks.  She makes all the asian food while I cook mostly the British/French/Italian dishes although my rice is better than hers (it's an art)

I have many very good authentic dishes engrained to memory if you would like one?

I am the cook in our household. Do a good Lasagne and a couple of good curries and a chilli. Good with desserts too.

I am up for cookery corner :y
