The larger engined ones do seem to have more go, and 140 is fairly quick and easy.  3.0l top speed quoted around 150.
Some-one told me that the 3.0 autos don't change into fourth gear until 110 m.p.h. The same person told me he'd been in one that was driven at 155
 
Driven hard, a retail spec 3.0l auto will pop into 4th at a shade under 130mph.
Just looked at the 4.2 diff thread that chris started and worked out the speed  per 1000 rpm in all gears, interesting are the numbers if the V6 could hold on till 7000rpm.

Seen 120 in 3rd on my 2.5 auto and it was confirmed by a T5 police roofbox @118mph
But not sure how the gearing differs on 2.5 compaired to a 3.2.
Also cant remember the change point in sport mode, think it's only 5500 on mine.
Never maxed the 3.0 Elite in 3rd. Was scary enough when I was confirmed at doing 118mph on what I thought was a private test track at 3am, never ventured above 100mph since.
